My homemade pasta recipe
Homemade vegan pasta is one of the most easiest things I've ever made from scratch and it allows me to endulge on types of pasta that I cannot buy in bulk. Specifically lasagne sheets, fettuccine and tagilatelle using my pasta machine. If you are lazy like me, this is the perfect recipe for you.
If you do not have a pasta machine, don't panic! You can still make perfectly good pasta without one, however it will take a little more effort to roll out. Just think of all the muscles you'll be getting! You don't need to go out and spend a lot of money on fancy pasta ingredients, just use these three easy ingredients found in every home!
~Makes one portion~
Ingredients:
*1 cup of plain flour
*Half a teaspoon salt
*1/4 cup lukewarm water
Step 1: Mix all of the ingredients together in a bowl until a dough is formed. If the mixture if too stiff, add some more water.
Step 2: Knead on a floured surface for 5-10 minutes until the dough is smooth and molded well.
Step 3: If you do not own a pasta machine, now is the time to roll out your dough on a floured surface to your desired thickness using a large rolling pin.
If you own a pasta machine, sprinkle a small amount of flour onto the rollers of the machine to prevent the pasta dough from sticking. Turn the roller thickness nozzel to setting 1. This should be the widest setting.
Roll the dough thin enough to fit inbetween the rollers and use the turning handle to force the dough through the gap and out underneath. Repeat this process until the dough is too thin to be stretched anymore on that setting.
Step 4: Change the nozzel setting to number 2 and and repeat step 3. I roll my dough to thickness number 2 as that is my prefered pasta thickness. You can however roll your dough to whatever thickness you like.
Step 5: Fix the attachment onto the machine
Step 6: Select which pasta you would like to make and transfer the turning handle to the appropriate setting (The two holes in the picture above). Like step 3, carefully place your dough through the roller and turn the handle so that you pasta is cut into the desired shape.
If you don't have a pasta machine you can cut strips of pasta using a knife or pasta cutting roller.
Step 7: Place the pasta in a pan with water and add a spash of oil to prevent the pasta from sticking together. Bring to the boil and stir with a fork to seperate the strands. Cook for 3 - 4 minutes, remove from the heat and serve immediately.
